Sushi Ninja Express – Commercial Fit-Out

A bold and highly functional commercial fit-out for Sushi Ninja Express, located within a busy New Zealand shopping mall. Designed to stand out while handling high customer flow, this project combines durable materials, smart layout planning, and strong brand identity throughout the space. The brief was to create a vibrant, high-impact sushi train environment that maximises customer seating within a compact footprint while supporting efficient service flow for staff. The space needed to reflect the Sushi Ninja brand through colour and design features, while using robust, durable materials suited to a high-traffic hospitality setting. This fit-out was designed to balance visual impact with everyday functionality. The sushi train counter forms the centrepiece of the space, with integrated seating allowing customers to engage directly with the experience. Surrounding this, booth seating and bar-style stools maximise capacity while maintaining comfort and flow. Custom joinery was used throughout to ensure durability, clean finishes, and seamless integration with the brand’s bold graphic elements. The project features a custom-built sushi train counter with integrated seating, complemented by booth seating to maximise space efficiency. High-durability commercial cabinetry and surfaces were used throughout, alongside feature elements that enhance the overall look and feel of the space. A custom rope installation adds texture and separation, while the layout has been carefully optimised to support both a strong customer experience and efficient staff workflow. A mix of durable, low-maintenance materials was selected to handle the demands of a busy food environment while maintaining a sharp, modern look. This included laminated cabinetry and joinery, hard-wearing benchtops, and easy-clean surfaces to support hygiene requirements, along with feature finishes designed to complement the bold brand colours. The finished space delivers a high-energy, visually engaging dining experience while remaining practical for day-to-day operations. With strong branding, efficient layout, and durable construction, Sushi Ninja Express is well-equipped to handle high volumes while maintaining a consistent customer experience.
